For those who don't know, annatto is a seed that is used in a lot of hispanic dishes for mainly adding color. My mom has been using it for years (we're puertorrican). She takes the seeds and slowly cooks them in oil. This releases the dye in the seeds. She then strains the oil to get the seeds out. The color it gives is a bright terracotta. This stuff stains like hell though! If it gets on your hands, clothing, countertops, etc. and you don't rinse right away, it's there forever (especially in fabric).
