Pectin question

Hi - I'm ready to experiment <G> -picked up some Pectin (Pomona's
Universal Pectin) and discovered it comes with TWO pouches - one of
the pure Pectin, and one with monocalcium phosphate. The box says
this is a low methoxyl pectin made from citrus peels and pulp, and
thus does not require sugar. I am assuming that for henna purposes I
need to use the monocalcium packet (or I won't get "jell",
right?)....does anyone know if this (the calcium mix) is a bad idea
for my hair?

I guess I had to get more complicated, right? LOL
