itchy head while henna-ing

Hi everyone,
Just a little question about henna use. I've been using henna for
over a year and half.

I've tried a variety of mixes and have noticed the same thing even
when using henna and just plain old vinegar/water.

Even though I wrap my head in plastic wrap and an old towel I still
notice that the henna is drying a bit around the neck and ear area.
When it is drying I get itchy until I can't stand it anymore and
rinse it out - about 2 hours. When I rinse my skin is NOT red or
irratated and the itching stops when it is rinsed off.

Has anyone else experienced this? Or, do you have any advice. I
don't want to stop using henna. I love the color and have gotten
many compliments on it
