Here's a chart that shows how the dye is released faster at longer temperatures.

I get a decent coloring with only around 2 hours on my head. The longer you leave it
on, the longer it can penetrate and you get a deeper, richer color. Some of the store
brands, even all-herbal ones, rely on other non-henna herbs to get some of the color
variation.
