For the henna to release the dye molecules, you have to break up the
plant cells where the molecules live. The most effective way to
break up the cell walls is with an acid of some sort (heat also
helps, but not as efficiently). Lemon juice is the most common acid
to use because it works quickly, very well, is inexpensive,
reasonably unlikely to cause allergic reactions, and is easy to find.
