pectin vs. gelatin

I made henna jelly last night, and though I think I put too much henna
and too little pectin, I was quite impressed that it left very little henna
dust in my hair.

I think the reason gelatin runs, while pectin doesn't, is that gelatin
requires chill to set, while pectin requires heat. So the gelatin melts on
the warm head, while the pectin stays jelly. I did get a bit of dripping,
and even hennaed my earwax, but no more than unjelled henna.
