I have been using the gel recipe anyway though because it really stretches out 100 grams and with my long hair that's a great benefit. I think the gel simply makes it thicker even though 500ml of fluid is added to it, stretching the henna but not really affecting the consistency. My most recent recipe I use the "no sugar necessary" pectin and instead of only using half of it (as the recipe says) I just dump in the whole little box. I've also noticed that the mix isn't so lumpy using the gel technique.
