I don't understand about additives

I want to henna but I don't understand about additives. Do the
additives themselves stain the hair (something like red wine or
cranberry juice or whatever), or do they actually alter the henna
itself. I just can't imagine hair turning brown if one were to put
coffee on it, so why would it turn more brownish if it is added to
henna. If it is because of staining ability of these things, I
cannot imagine the effect lasting very long at all.
